Puerto Vallarta

Words cannot describe how much I love Mexico. And this trip to Puerto Vallarta only made me love it even more. It was tropical, it was hot, it was colorful, it was amazing. With the view of the ocean while sitting under an umbrella and sipping on ice, cold beer, I mean, come on. #paradise. The town itself is full of history and architecture, and obviously amazing food. We also crashed a wedding, no big deal. But after venturing out of the city and heading to Sayulita, I must say, I discovered that Sayulita is my jam. We went on a Monday so most people were off the streets which gave us more time to take pictures of walls and doors and buildings and other random finds. Back at the resort, our view was casually 8 stories high that overlooked the entire bay. We had endless margaritas on the balcony while watching the sunset and eating bomb food, literally it was so hard to leave. On our last night we went to Fajita Republic, which of course I pictured Wet Republic in Las Vegas with unlimited amounts of fajitas. Like a pool party meets an authentic buffet. Why no one has thought of that is beyond me. Back to the real Fajita Republic. This place was unreal. The food was unreal. I think I gained a pound just based on the BOTTOMLESS BEANS. Legit, you order meat and they fry it pretty much in front of you, you get tortillas, and then they bring out the cheese, guacamole, beans, rice, pico de gallo, & sour cream. Heaven. Just heaven, wrapped up in a tortilla. The next day I headed out of Mexico and to the complete opposite of paradise, a.k.a. Phoenix, AZ (no offense) to coach volleyball. I'm so thankful and grateful I got to go on this trip, I really can't wait to go back someday. Hopefully soon because I'm seriously craving a burrito and a margarita after writing this.
